This is a dish full of immunity-fighting nutrients (vitamin B & C, antioxidant selenium and zinc as well as fiber) and has a creamy, smooth texture that baby will love. If you have a family history of nut allergies, you can replace the cashew butter with regular greek yogurt which keeps the creamy texture of the recipe intact and adds a little “zing” to this recipe.
4 peaches, peeled and pitted
Juice of 2 oranges
1 tbsp of cashew butter or regular greek yogurt
1. Chop the peaches flesh into bite-size pieces and put them in a saucepan with the orange juice.
2. Bring to a boil then reduce the heat to low, covering the mixture and letting it simmer for 2-3 minutes until peaches are soft.
3. Pour the mixture into a blender, including the cooking juices, add cashew butter or yogurt and puree until smooth and creamy.
4. Let cool and store in fridge for up to 3 days or freeze for one month.
