I always keep 4-5 cans of tomatoes in my pantry. Canned tomatoes are nutrient dense and can transform any recipe in a pinch. Tomatoes contain lycopene, a powerful antioxidant for your baby’s immune system, as well as beta-carotene, vitamin C, & E, all of which do amazing things for baby’s eyesight.
1lb. 2oz. Sweet potatoes, peeled & cubed
2 tbsp olive oil
1shallot, finely chopped
2carrots, finely chopped
1 celery stick, finely chopped
1 garlic clove, chopped
14oz. canned chopped tomatoes
9oz. Canned roasted red pepper, drained
1lb. lean ground beef or lamb
5 1/2oz. Baby spinach leaves
1/4 cup grated cheddar
1. Preheat oven to 350F, while boiling sweet potatoes in a saucepan for 15 minutes until soft. Drain once cooked
2. While potatoes are cooking, sauté shallots, carrots, celery and garlic in 1 tbsp of oil for 3 minutes until shallots are soft. Process mixture with the tomatoes and peppers until smooth.
3. Add ground meat to the pan, then cook over medium heat until browned, then add tomato sauce mixture and spinach, bring to a boil then reduce and cover, letting it simmer for 25 minutes.
4. Mash the sweet potatoes, mix in half of the grated cheese and remaining oil. Spoon the mashed potatoes over the meat, sprinkle with remaining grated cheese then bake for 30 minutes until golden.
